Freda Shafi cooks Indian cuisine with a modern twist, in this class you’ll learn to make a selection of dishes from her sold out pop up events across the country. You’ll also get lots of hints and tips from Freda on building an online brand and running pop up dining events.

Lunch with wine is included in this session.

What you will learn:

  • Learn the secrets of spice using both traditional and experimental methods.
  • Make a “simple” spice blend that can be used across multiple dishes.
  • How to make a Punjabi Samosa.
  • Make a Lamb Tikka Boti or Lamb Tikka Masala.
  • Make Tarka Daal.
  • Make a great side dish of Hyderabad Vegetable Biryani.
  • Learn how to style your plates to perfection.
  • Tips on how best to use social media channels to increase your following, build a brand and earn a living through social media.
  • How to engage with key influencers to help you and create collaborations.
  • How to run a pop up kitchen – Ingredients, equipment, prep and budgeting.

Full recipes, including ingredients list and method, are provided for you to take home to add to your repertoire so you can keep on cooking them time and time again:

What you can take home:

There is a tasting session after each class where you have the chance to sample the tutor’s version of each dish.

For Lunch you will have:

  • Tarka Dhal
  • Punjabi Samosa

You will take these dishes home for your evening meal:

  • Lamb Tikka Boti or Lamb Tikka Masala
  • Hyderabad Vegetable Biryani

Please note that you do not need to bring any equipment or ingredients with you as this will be provided by the cookery school and is included in the cost. You will however need to bring some sizeable (minimum 1L) food storage containers to take your food home in.

Tea and coffee are provided throughout on all of our classes.
