Exploring the art of sweet and choux pastry this 4 hour session is packed with hints and tips to help you achieve amazing pastries to impress your friends and family.

Techniques you will learn:

  • Resident Chef Simon Chappelow will demonstrate and show you how to expertly make, rest, roll and blind bake the perfect sweet pastry shell. You will also acquire the skills to make an amazing crème patisserie filling and learn how to decorate and glaze a seasonal fruit tart like a professional.
  • You will also make fluffy light choux pastry fingers, dip them in a dark chocolate fondant and fill with a delicious vanilla whipped cream using a piping bag to make the classic chocolate éclair.
  • You will make a bonus recipe, Wholemeal pastry pasty filled with green lentil and butternut squash, which you will eat for your lunch.

Full recipes including ingredients and method are provided for you to take home to add to your repertoire so you can keep on cooking them time and time again:

  • Choux pastry chocolate eclairs
  • Sweet pastry tart filled with crème patisserie and seasonal fruit
  • Wholemeal pastry pasty filled with green lentil and butternut squash which you will eat for your lunch.

What you can take home:

There is a tasting session after each class where you have the chance to sample the tutor’s version of each dish.

Please note that you do not need to bring any equipment or ingredients with you as this will be provided by the cookery school and is included in the cost. You will however need to bring a couple of sizeable (minimum 1L) food storage containers to take your food home in.
