About this experience

Local Chef Stephanie Moon is a chef consultant for All Things Food and formerly Executive Chef at Rudding Park, where she cooked with some of the finest Yorkshire produce from their extensive kitchen gardens. Steph has travelled the world with her job and has been on BBC 2 Great British Menu and BBC1 Chefs: Put Your Menu Where Your Mouth Is. Steph is a regular on the Northern Food Scene but likes to travel further afield promoting the use of fresh local produce on her menus.

On this session Steph will impart her knowledge on seasonal British produce, showing you how to get the very best out of the British spring!

Techniques you will learn:

  • How to prepare and fillet flat and round fish. 

  • How to create a beurre noisette sauce. 

  • Basic knife skills and knife cuts. 

  • How to create a centrepiece champagne jelly with evenly spaced fruit & flowers. 


Full recipes, including ingredients list and method, are provided for you to take home to add to your repertoire so you can keep on cooking them time and time again.

  • Plaice with Brown shrimps and beurre noisette herb crushed new potatoes and spinach princess

  • Fresh trout coloubriac

  • Yorkshire Wensleydale, Watermelon & Beetroot Salad

  • Champagne Jelly

What you can take home:

There is a tasting session within the class where you have the chance to sample the tutor's version of each dish. For lunch you will sit down and enjoy the Plaice with Brown Shrimp dish you make in the morning. You will take home the other dishes you make.

Please note that you will need to bring two of sizeable (minimum 1L) food storage containers to take your food home in, we will provide all other equipment and ingredients.

We use induction hobs at the cookery school so if you have a pacemaker fitted please get in contact with us when you have booked to let us know so we can adapt our equipment to meet your needs. 

Refreshments are provided throughout, on all of our classes.
