In this zero waste whole chicken class you will learn that whole chickens are not just for Sunday roasts, you can make multiple meals just from one bird. Ever wondered how to bone a chicken? What goes into a good chicken marinade? How do you make fresh chicken stock? Well our Resident Chef will guide you how to do this and more.
Techniques you will learn:
- How to bone and portion a whole chicken.
- The science and techniques behind marinating.
- The art to a good chicken stock.
- What to do with leftovers.
- Jerk chicken drumsticks and thighs
- Chicken breast Saltimbocca
- Chicken stock
- Rice and beans to accompany the Jerk Chicken (the chicken stock will be used to make this)
Full recipes, including ingredients list and method, are provided so you can keep on cooking them time and time again.
What you can take home:
There is a tasting session after each class where you have the chance to sample the tutor’s version of each dish.
Please note that you will need to bring a couple of sizeable (minimum 1L) food storage containers to take your food home in, we will provide all other equipment and ingredients.
Tea and coffee are provided throughout on all of our classes.
